Calabacitas

This traditional Mexican dish is made with summer squash, corn and peppers. The Avocado Hot Sauce makese this delicious side dish even better!

Ingredients

  • 1 tablespoon butter
  • 1 red onion diced
  • 2 poblano peppers, diced small
  • 4 cloves garlic, minced
  • 2 small zucchinis, cubed
  • 2 small yellow squash, cubed
  • 1 cup frozen yellow corn
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 1 teaspoon Mexican oregano
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ¼ teaspoon cayenne pepper
  • ¼ cup chopped cilantro
  • ¼ cup sour cream
  • ¼ cup HERDEZ® Avocado Hot Sauce
  • ¾ cup crumbled cotija cheese

Directions

  1. Heat butter in skillet over medium-high heat. Cook onions and poblano pepper for 5 minutes or until softened.
  2. Add garlic, cook 1 minute.
  3. Add zucchini, squash, corn, and seasonings. Cook 4 minutes, or until just tender.
  4. Add cilantro.
  5. Remove from heat, stir in sour cream.
  6. Then, stir in HERDEZ® Avocado Hot Sauce.
  7. Gently stir in cheese.
