Chile Relleno De Molida Con Mole

Ingredients

  • 2 tablespoons oil
  • 1 tablespoon garlic, minced
  • ½ cup onion, chopped
  • 1 pound ground pork
  • 1 chipotle in adobo chili, chopped
  • 1 cup green apple, cut into cubes
  • 1 cup peach, cut into cubes
  • 1/2 tablespoon salt
  • 1/2 tablespoon pepper
  • 1 cup tomato sauce
  • ⅓ (78g) jar DOÑA MARÍA® Mole Original
  • 1 ½ cups chicken broth
  • 4 Poblano chilis, peeled and seeded
  • 1 tablespoon sesame seeds toasted

Directions

  1. Heat oven at 400ºF.
  2. In medium pot, over medium heat, add oil and sauté garlic and onion.
  3. Add pork and cook until golden brown. Add chipotle chilis and stir for 2 minutes.
  4. Add apple, peach, and stir for 2 additional minutes. Add salt and pepper.
  5. Low the heat, pour tomato sauce, cover pot with lid, and cook for 4 additional minutes.
  6. In small pot, pour DOÑA MARÍA® Mole Original and chicken broth.
