Chorizo Spaghetti Squash

The bold flavors of HERDEZ® Chipotle Salsa Cremosa and savory sausage transform this spaghetti squash recipe.

Ingredients

  • 2 spaghetti squash, halved and deseeded
  • 2 tablespoons olive oil
  • Salt and pepper
  • 9-ounces pork chorizo
  • 1/4 cup chopped onion
  • 1/2 green bell pepper, chopped
  • 1 Anaheim chili pepper, deseeded and chopped fine
  • 2/3 cup HERDEZ® Chipotle Salsa Cremosa
  • 2 tablespoons butter
  • 1/2 cup shredded Mexican cheese

GARNISH

  • Mexican crema
  • Fresh chopped parsley

Directions

  1. Drizzle olive oil and add salt and pepper to each squash halve. Lay hollow side down on parchment lined baking sheet. Roast in oven at 400° for 35-40 minutes.
  2. In medium saucepan, over medium-high heat, cook chorizo for 5 minutes, remove from pan. In same pan, add onions and bell pepper, cook 3 minutes. Add zucchini and cook additional 3-5 minutes. Season vegetables with salt and pepper.
  3. Add chorizo back to pan and stir in HERDEZ® Chipotle Salsa Cremosa and butter. Cook another minute until butter is melted. Remove from heat.
  4. Flip squash over and use a fork to pull squash into “spaghetti”. Add equal parts sauce to each half. Garnish with Mexican crema and parsley.

NOTE: Leave seeds in Anaheim peppers if you desire an extra spicy dish.
