Mexican Frittata

We use our HERDEZ® Avocado Hot Sauce both in the frittata and on top for a rich Mexican flavor that will have you making this every weekend. A breakfast recipe with a kick!

  • 1 tablespoon olive oil
  • 5-ounces chorizo
  • 1/2 cup halved cherry tomatoes
  • 1/2 cup diced yellow onion
  • 1 cup spinach
  • 10 eggs
  • 2 tablespoons heavy cream
  • 2 tablespoons HERDEZ® Avocado Hot Sauce
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon Mexican oregano
  • 1/2 teaspoon garlic powder
  • 1 cup shredded Pepper Jack cheese



  1. Grease medium/large cast iron skillet with olive oil.
  2. In medium pan cook chorizo over medium-high heat for 5 minutes. Add tomatoes, onion and spinach and cook another 3-4 minutes.
  3. In medium bowl, whisk eggs and cream together. Add remaining ingredients and whisk well.
  4. Add chorizo mixture to bottom of skillet and pour egg mixture over top.
  5. Bake at 375° for 20 minutes, or until egg mixture just stops jiggling.
  6. Top with HERDEZ® Avocado Hot Sauce, jalapeños, cotija cheese and cilantro.
