  • 1-pound pork chorizo
  • 1/3 cup diced red onion
  • 1 teaspoon minced garlic
  • 1/3 cup oil
  • 1 large russet potato, diced 1/2-inch cubes
  • HERDEZ® Guacamole Salsa Medium
  • 10 street taco style tortillas
  • 1 cup shredded Mexican cheese

  1. In large pan, over medium-high heat, cook chorizo and onion 4 minutes.
  2. Add garlic, cook additional 1-2 minutes. Remove mixture from pan, set aside.
  3. Add oil to existing pan and heat over medium heat. Add potatoes and cook 8-10 minutes, stirring throughout. Drain oil and add chorizo mixture back to pan and combine. Set aside.
  4. Heat 1 tablespoon oil in large pan and add 3-4 tortillas. Add about 1 1/2 tablespoons cheese to each tortilla. Cook about 2 minutes, until cheese melts, add 1/4 cup of potato-chorizo mixture and 1 teaspoon HERDEZ® Guacamole Salsa to each tortilla.
  5. Carefully fold tortillas over and press together – cheese will help hold them closed. Remove from heat.
  6. Repeat this process until all 10 tacos are made.
  7. Top the tacos with drizzle of HERDEZ® Guacamole Salsa Medium, WHOLLY® Diced Avocado and cilantro.
