Chorizo Pasta Bake

Ingredients

  • 1-pound rotini pasta, cooked
  • 9 ounces pork chorizo
  • 1/2 cup beef broth
  • 3/4 cup heavy cream
  • 1/2 cup LA VICTORIA® Creamy Roasted Garlic Enchilada Sauce
  • 1 teaspoon red pepper flakes
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon pepper
  • 1/2 teaspoon salt
  • 1 lime, juiced
  • 2 cups shredded sharp cheddar cheese
  • 1 tablespoon chopped cilantro

Directions

  1. Heat oven to 350.
  2. In large saucepan, cook chorizo on medium-high heat for 3-5 minutes.
  3. Add beef broth and cream. Bring to boil and let simmer 3-5 minutes to thicken.
  4. Stir in LA VICTORIA® Creamy Roasted Garlic Enchilada Sauce and seasonings, cook on low for 3 additional minutes.
  5. Remove from heat and stir in lime juice.
  6. Add cooked pasta to sauce, stir to combine. Stir in 1 cup cheese.
  7. Grease casserole 9×13 casserole dish, then add pasta mixture. Sprinkle remaining cup of cheese over top.
  8. Bake at 350 for 15-20 minutes.
  9. Garnish with cilantro.
