Layered Taco Casserole
Layers of tortillas, beans, cheese, and ground taco meat make up our easy and delicious Layered Taco Casserole. The perfect family weeknight dinner!

Ingredients
- 1-pound ground beef
- ½ yellow onion, chopped
- 1 packet CHI-CHI’S® Taco Seasoning Mix
- 1 ½ cups CHI-CHI’S® Thick n’ Chunky Salsa, Medium, separated
- 6 CHI-CHI’S® Fajita Style Flour Tortillas
- 10-ounces Traditional Refried Beans
- 2 ½ cups shredded Mexican blend cheese, separated
- Garnish/Serve with:
- – Sour cream
- – Shredded lettuce
- – Chips
Directions
- Heat oven to 375°.
- Cook ground beef and onion in medium sauce pan over medium-high heat until meat is browned and onion is softened. Drain grease, if needed.
- Add CHI-CHI’S® Taco Seasoning Mix and follow instructions on packet.
- Stir in CHI-CHI’S® Thick n’ Chunky Salsa.
- In greased 9”x13” pan spoon small amount of meat mixture onto bottom.
- Layer 2 tortillas, ½ beans, ½ meat mixture, 1 cup cheese. Repeat layers.
- Add remaining 2 tortillas, ½ cup CHI-CHI’S® Thick n’ Chunky Salsa and ½ cup cheese.
- Bake at 400°, covered with foil, for 35 minutes.
- Remove from oven, let cool 5 minutes.
- Garnish each piece with sour cream and shredded lettuce. Serve with chips.
