Mexican Creamed Corn

  • 2 tablespoons butter
  • 1/2 red onion, chopped fine
  • 1 tablespoon flour
  • 1 cup half & half
  • 1/2 cup milk
  • 3 teaspoons CHI-CHI’S® Taco Seasoning Mix
  • 4-ounces cream cheese, softened
  • 8-ounces green chiles, drained
  • 16-ounces corn
  • Salt and pepper


  • 1/4 cup crumbled Queso Fresca
  • Fresh chopped cilantro


  1. In medium saucepan, over medium-high heat, cook butter and onions 3-4 minutes. Stir in flour and cook 1 minute. Slowly add half & half and milk, stirring constantly. Simmer 2 minutes while sauce thickens.
  2. Add CHI-CHI’S® Taco Seasoning, cream cheese, green chiles and corn. Season with salt and pepper to taste. Cook on low 5-10 minutes.
  3. Garnish with Queso Fresca and cilantro.
