Mini Tortas

Fun party food for a crowd! These Mini Tortas are packed with beef, peppers, onions and queso! We make them sheet pan style, which makes the whole process much easier.

Ingredients

MEAT MIXTURE

PEPPERS & ONIONS

  • 1 green bell pepper, julienned
  • 1 yellow bell pepper, julienned
  • 1 medium onion, julienned
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • Juice of 1/2 lime

BUTTER MIXTURE

  • 3 tablespoons butter, melted
  • 1 teaspoon Mexican oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper

Directions

  1. In medium saucepan, cook ground beef and onions until meat is browned. Drain grease, if necessary.
  2. Add CHI-CHI’S® Taco Seasoning Mix and cook according to directions.
  3. Stir in CHI-CHI’S® Thick & Chunky Salsa Hot, remove meat mixture from heat and set aside.
  4. In medium saucepan, cook peppers and onions on medium heat 8-10 minutes, or until softened slightly. Add seasonings and lime juice. Remove from heat and set aside.
  5. In small bowl, combine butter and seasonings, set aside.
  6. Carefully slice sheet of rolls in half.
  7. Place bottom side of rolls on foil lined sheet pan.
  8. On bottom and top side of rolls, spread CHI-CHI’S® Salsa con Queso.
  9. Add meat mixture to bottom rolls, spread evenly.
  10. Then add peppers and onions.
  11. Gently place top side of rolls on bottom side of rolls.
  12. Brush butter mixture over tops of rolls.
  13. Bake at 350° for 20-25 minutes. If needed, add foil over top to avoid too much browning.
  14. Remove from oven and cut along creases to form mini tortas.
